The most useful of all Doctor Jack serums. When made, it can be used in countless prescriptions, from the Prickly Pear Margarita to the Key to an MT (Mai Tai) Desert Beach. As with all serums, personal taste and the particular qualities of the fruit you are using dictate the exact proportions, but here is is a good rule of thumb.
Prickly Pear Serum
5 Parts Prickly Pear Cactus Juice (see Dr. Jack Philosophy section for where to acquire and how to juice)
1 Part Fresh Orange Juice
1 Part Fresh Lime Juice
1 Part Fresh Lemon Juice
2 Parts Agave Nectar (you can substitute turbinado or a lightly refined cane sugar, if you don’t have agave)
Combine all the ingredients, using a blender helps combine the thicker agave nectar, but isn’t a necessity, if you don’t mind a little extra stirring. Properly refrigerated, it can last as long as three weeks, before it starts to ferment.
If the Orange juice is sweet enough, making the above proportions 3 parts OJ usually works just fine. Same goes for the lime and the lemon, but only use 2 parts, with 2 parts agave nectar.
